For the coulis
- 100 g berries
- 10 g sugar
- 1 pinch of pepper
For the cream
- 120 ml plant-based milk (homemade oat milk here)
- 120 ml plant-based yogurt (almond here)
- 15 g sugar
- 5 g vanilla sugar
- 2 tsp agar-agar
Instructions
- Place the blackberries in a saucepan, add 10 g of sugar and a pinch of pepper.
- Heat over high heat, stirring. (Optional: strain to remove the seeds). Refrigerate the coulis.
- In another saucepan, combine the milk, yogurt, sugar, and agar-agar. Bring to a boil while stirring constantly.
- Once boiling, remove from heat and pour into glasses or ramekins. Refrigerate for 2 hours.
- After 2 hours, top the panna cotta with the berry coulis.
- Garnish with basil, mint, or any other topping of your choice.
Notes
I highly recommend straining the coulis to remove the seeds, as they can make the panna cotta less enjoyable to eat.
