Ingredients

- 350g potatoes, peeled and diced
- 1 onion, chopped
- 1 clove garlic
- 1 tablespoon fresh ginger grated, or 2 tbsp powder
- 1 liter vegetable broth or water
- 200ml unsweetened plant-based milk (homemade oat milk here)
- Salt and pepper to taste
Instructions
- Boil the potatoes in vegetable broth
- Blend using an immersion blender, or a standard blender
- Add the milk and simmer for 5 to 10 minutes
- Season as needed
- Serve and top as you want (I like adding sunflower seeds, coriander, and chili flakes)
