Creamy Potatoe & Ginger Soup

Ingredients

  • 350g potatoes, peeled and diced
  • 1 onion, chopped
  • 1 clove garlic
  • 1 tablespoon fresh ginger grated, or 2 tbsp powder
  • 1 liter vegetable broth or water
  • 200ml unsweetened plant-based milk (homemade oat milk here)
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in vegetable broth
  2. Blend using an immersion blender, or a standard blender
  3. Add the milk and simmer for 5 to 10 minutes
  4. Season as needed
  5. Serve and top as you want (I like adding sunflower seeds, coriander, and chili flakes)
