Ingredients
For the schnitzel
- 70 g vital gluten flour
- 45 g rolled oats
- 100 ml plant-based milk (homemade oat milk here)
- 15 g wheat flour
- Herbs and spices, to taste
- 1 pinch salt
For the crust
- 30 g corn or potato starch
- 60 ml water
- 1 pinch turmeric
- 1 pinch salt
- 60 g breadcrumbs
Instructions
- Mix all the schnitzel ingredients in a food processor until you have a firm dough.
- Using a rolling pin, roll out the dough into long, thin schnitzel shapes. Flip them occasionally.
- Take each schnitzel, coat it with the breadcrumb mixture, then dip it into breadcrumbs to cover completely.
- Fry the schnitzels in a pan with oil until golden brown on both sides.
- Optional: Add a bit of plant-based butter and bake in the oven for 4 minutes at 150°C (for easier digestion).
- Serve with your favorite sides (salads, fries, mushroom sauce…)!
Notes
