Ingredients

For the schnitzel

  • 70 g vital gluten flour
  • 45 g rolled oats
  • 100 ml plant-based milk (homemade oat milk here)
  • 15 g wheat flour
  • Herbs and spices, to taste
  • 1 pinch salt

For the crust

  • 30 g corn or potato starch
  • 60 ml water
  • 1 pinch turmeric
  • 1 pinch salt
  • 60 g breadcrumbs

Instructions

  1. Mix all the schnitzel ingredients in a food processor until you have a firm dough.
  2. Using a rolling pin, roll out the dough into long, thin schnitzel shapes. Flip them occasionally.
  3. Take each schnitzel, coat it with the breadcrumb mixture, then dip it into breadcrumbs to cover completely.
  4. Fry the schnitzels in a pan with oil until golden brown on both sides.
  5. Optional: Add a bit of plant-based butter and bake in the oven for 4 minutes at 150°C (for easier digestion).
  6. Serve with your favorite sides (salads, fries, mushroom sauce…)!

Notes

Traditionally, schnitzels are served with potato salad, cucumber salad, vegetable salads, and potato-based dishes like fries or rösti.
