Here is a quick alternative to traditional pizza dough, if you don’t have the time to let your dough rise. Moreover, it is a healthier choice as oats are much more nutrient-rich than refined wheat flour. The texture might be a bit different, so adjust the amount of oil and the baking time based on how you like your dough.

Ingredients

For a 20cm diameter « pizza »

  • 100g rolled oats
  • 2 tsp flax seeds, ground and soak for 10min
  • 6 tsp water
  • 1 pinch salt
  • spices to taste
  • 1,5 teaspoon baking powder
  • 1 tbsp olive oil

Instructions

  1. Soak the flaxseeds and oats in water for 10 minutes.
  2. Preheat the oven to 180°C (356°F).
  3. Then, place all the ingredients in a blender.
  4. Blend until you get a slightly sticky dough that you can easily work with and that holds together. Add a little flour if needed.
  5. Spread the dough on baking paper.
  6. Bake for 10 to 15 minutes at 180°C (356°F).
  7. Add your preferred base and toppings.
  8. Bake for another 3 to 5 minutes at 180°C (356°F).

Notes

Here, I made a base by mixing white beans, tomato sauce, and spices. For the topping, I used artichokes, leeks, capers, and peanuts.
