Homemade Split Pea Tofu

Ingredients

  • 200g raw split peas
  • 950ml water
  • 20 ml lemon juice or apple cider vinegar
  • Optional: salt

Instructions

  1. Rinse the split peas thoroughly and soak them in water overnight.
  2. Blend everything in a powerful blender.
  3. Pour the mixture into a large pot.
  4. Cook over medium heat for 15 to 20 minutes, stirring, until it reaches a relatively thick consistency.
  5. Add the lemon juice or vinegar, then turn off the heat.
  6. Pour into a mold and let it sit in the fridge for a few hours.
  7. Unmold and cook like store-bought tofu.

Notes

I love marinating it and then stir-frying it in a wok, or breading it and cooking it in the air fryer! It also works great in curries, skewers, or even salads.
