If you’re looking for a unique, nutritious way to start your day, these vegan lentil and cacao waffles are an excellent choice. Ingredients

  • 150 ml plant-based milk (homemade oat milk here)
  • 100 g raw black lentils (beluga)
  • 56 pitted dates
  • 15 g cacao powder
  • 1/4 tsp salt
  • 1 tsp baking powder

Instructions

  1. Rinse the lentils and let them soak overnight.
  2. The next day, blend the soaked lentils with the other ingredients until you achieve a smooth texture.
  3. Cook the batter in a waffle maker for about 3 to 6 minutes, depending on your device.
  4. Top with yogurt, chocolate chips, and any other toppings you prefer.

Notes

For the toppings, I like to use some plant-based yogurt, some cacao nibs, and a bit of maple syrup.
