Ingredients
- 100g cooked lentils
- 120g wheat gluten flour
- 1–2 tbsp seasoning mix of your choice
- 1–2 tbsp oil
- 1 tbsp tomato paste
- 60 –120ml water
Filling of your choice
Here we have:
- Mustard
- Pickles
- Onions
- Mushrooms
- Spinach
- Some veggie stock for marinating
Instructions
- Add the wheat flour, lentils & the remaining ingredients in a food processor
- Gradually add water until you reach the desired consistency
- The dough should be quite firm but nothing should stick to your fingers
- Roll the dough into a thin long dough with a rolling pin
- Top with the fillings of your choice
- Fold in the sides slightly & then roll it into a roulade form
- Fry the roulade in a pan & flip until both sides are brown
- Fill the pan with vegetable stock & add it to the oven
- Bake the roulade for 25 minutes at 180°C , flipping occasionally
