Vegan Roulade – Easy and Healthy

Ingredients

Units Scale
  • 100g cooked lentils
  • 120g wheat gluten flour
  • 12 tbsp seasoning mix of your choice
  • 12 tbsp oil
  • 1 tbsp tomato paste
  • 60120ml water

 

Filling of your choice

Here we have:

  • Mustard
  • Pickles
  • Onions
  • Mushrooms
  • Spinach
  • Some veggie stock for marinating

Instructions

  1. Add the wheat flour, lentils & the remaining ingredients in a food processor
  2. Gradually add water until you reach the desired consistency
  3. The dough should be quite firm but nothing should stick to your fingers
  4. Roll the dough into a thin long dough with a rolling pin
  5. Top with the fillings of your choice
  6. Fold in the sides slightly & then roll it into a roulade form
  7. Fry the roulade in a pan & flip until both sides are brown
  8. Fill the pan with vegetable stock & add it to the oven
  9. Bake the roulade for 25 minutes at 180°C , flipping occasionally
