Tofu! Yep, all you need to do is blend it with vinegar, a little liquid if needed, and a few spices.
And boom, in less than 5 minutes, you’ve got your homemade, healthy, vegan mayo for the week!
An ultra-quick option perfect as a dip, sauce, for salads, or even as a spread!

Ingredients
- 1 block of tofu (200g)
- 2 tbsp rice vinegar or apple cider vinegar
- 1 tsp miso
- 1/2 tsp salt
- Optional: 1/4 tsp turmeric powder and a pinch of black salt (kala namak)
- If needed: a little water or plant-based milk to adjust the texture
Instructions
- Add all the ingredients to a blender and blend until smooth.
- If the mixture is too thick, add a little water or plant-based milk to adjust to the desired texture.
