Plant-Based Smoked « Salmon » – Vegan

- 1 kg carrots
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1.5 tbsp liquid smoke
- 1 tbsp apple vinegar
- 1/4 tbsp maple syrup
- 3/4 tbsp salt
- 1 tbsp very warm water
Instructions
- Peel and trim the carrots + Peel them into thin slices
- Fill a large pot with water, salt it generously, and bring to a boil
- Cook the carrots in the boiling water for exactly 5 minutes. (The slices should be soft but not too fragile and watery. If they are still undercooked you might want to give them another minute)
- Discard the water and rinse the carrots with cold water
- In a bowl, combine all the remaining ingredients, making sure the water is warm enough for the salt to dissolve
- Place the carrots in a container and pour the marinade over. Give it a gentle toss so the liquids can cover all the carrots
- Keep the carrot « salmon » in the fridge overnight to marinate and soak up the flavors
