Ingredients
Scale
- 1 block of tofu (200g)
- 2 tbsp rice vinegar or apple cider vinegar
- 1 tsp miso
- 1/2 tsp salt
- Optional: 1/4 tsp turmeric powder and a pinch of black salt (kala namak)
- If needed: a little water or plant-based milk to adjust the texture
Instructions
- Add all the ingredients to a blender and blend until smooth.
- If the mixture is too thick, add a little water or plant-based milk to adjust to the desired texture.
Notes
You can then use this light, protein-packed vegan mayo just like traditional mayo: as a dip, in a salad, with appetizers… Be creative!
